Why I love this Venison Cube Steak Recipe

Venison is always a big win in my household. It does not matter what recipe it is either! Even my pickiest eater will gobble up the whole meal as long as there is deer meat in it! The first time I ever ate at my husband’s family’s home my mother-in-law served up deer gravy and it was delicious! Sadly, I have no idea what she put in it but it was so good that I had to recreate this amazing comfort food for myself!

For this recipe, each season I request for the processor to cut us several pounds of deer cube steak. Cubed steak is a versatile cut of meat that works perfectly in this recipe as it is already tenderized. Moreover, it makes for a wonderful busy weeknight meal on the stove top. Which is a must if you have a busy family like mine. I love this recipe because I can throw it together and have a hearty family meal within 20 minutes. Besides that, this tender cube steak will melt in your mouth. It is super easy to make and my husband loves it!

  • Venison cube steak
  • Onion
  • All-purpose Flour
  • Butter or olive oil
  • Better than Bullion ( any variety besides chicken works but beef is the best) or Beef broth
  • Worcestershire Sauce
  • Garlic powder
  • Salt
  • Black pepper
  • **The best thing to serve this over is a bed of rice or mashed potatoes

Step-by-Step Instructions for Venison Cube Steak Recipe

Step 1: Cook the venison cube steak

Season the cubed steaks with salt, pepper, and garlic powder. Heat your butter or olive oil on a large skillet to medium-high heat. You will know it is ready if you sprinkle water on it and it sizzles and pops. Next, add onions to the frying pan and cook until translucent.

Then place the venison cube steaks in a single layer onto the skillet. Brown them on each side. They do brown quickly. Be sure that the slices of cube steak are cooked completely through before moving on to the next step.

Step 2: Create the roux

Sprinkle flour onto the cubed steaks. Mix the flour into the oils and juices. This will look like the texture of a paste. Let the flour cook on medium heat for about 2-4 minutes until the flour becomes golden brown.

Step 3: Turn it into gravy!

Mix the Better Than Bullion, Worcestershire Sauce, and water together to create a broth. Pour a small amount of broth into the skillet and stir into the flour mixture. Increase temperature to high heat bringing the gravy to a boil. Wait for the gravy to begin to thicken. When the gravy mixture begins to thicken you may slowly add more broth. Stir constantly. Reduce the temperature to low heat and let the gravy simmer. Wait for the gravy to thicken before serving.

Step 4: Eat!

You will now have a delicious meal of tender venison cube steak ready for eating! A great way to serve this tender steak is over mashed potatoes or cooked rice and enjoy!

Tips

While it is easiest to get a juicy venison cube steak from a processor, it is possible to get a similar cut at home. You would need to use a meat mallet or meat tenderizer to tenderize hind-quarter venison steaks. This Alabama Extension video demonstrates to create a tender steak properly.

Green beans, creamed corn, mashed potatoes, rice, buttered noodles, and a simple salad all go great with Venison Cube Steak!

You can add a cornstarch slurry to the warm broth. Simply pour all of your liquid ingredients into the skillet and bring to a simmer. Then in a separate cup mix 2 tablespoons of cornstarch into a small amount of cold water until smooth. Pour the cornstarch solution into the skillet, bring to a boil, and let thicken.

  • 1 tablespoon Beef Better than Bullion
